7. Jam

Mummy said, the first most important thing to do before cooking, was to wash and scrub our hands, nice and clean, with fresh running water at the kitchen sink.

Taking the hand rinse, and washing clean, running the water, we was all ready to begin.

1. Warming the oven to the highest degree

Mummy said we would need our hands to filter the flour into the bowl, it was part of my Nanny's secret recipe.

My mum preferred traditional cooking, mostly done by eye and hand.

Mummy said, pour that flour into that cup, and then straight into the bowl, then she asked my sister to do it again .

Mummy said, take the flour and filter it, rubbing it through your hands', just like this, showing us how to do it first, do this until you see that the flour is nice and fine, she said.

Me and my sister rubbed the flour into the bowl until it was nice, light and fluffy.

Mummy said, three spoons of soft butter straight into the bowl, and squish and squash until you get a light dough.

Then crack your eggs straight over into the bowl.

Take 30 mls of milk and pour into the mixture, with the same amount of water,  and then whip and whip and whip,  until you get a nice looking thick cream based dough, add in your cocoa powder and your already to cook.

Mummy said, now rub your cooking trays with soft butter, until all the tray is covered in translucent butter, now you pour your mixture in, smooth it over, flat it down until the mixture is all the same level, then gradually smooth the mixture around until you have a small airtight mount.

Place in the oven and cook airtight for Thirty to forty five minutes'.

We done all this again, until we had, two ready to cook, very fine whipped cakes' , ready to oven bake.
